Ukraine during the past two years as found by its own correspondent. We have not de pended on official Mosco* information at aiy time. In the last few weeks our correspondent has made another independent tour of the provinces and as soon as we have his reports in hand we sha^l begin publishing them. Con sequently we oannot agree wltb your statement that the American press has been silent in the matter. Certainly the Herald Tribune has not been silent. Vhank you very much, however, for your interest in writing us. Yours vary truly HEAD — START COOKING VEAL MARENGO MAKES 6 SERVING 6 slices bacon, cut into 1-inch pieces 2 pounds veal (shoulder), cubed 4 tablespoon flour 2 teaspoons salt V a teaspoon pepper 1 pound small white onions, peeled 1 clove garlic, minced Уг cup water 4 medium size tomatoes, peeled and chopped 1 can (6 ounces) whole mushrooms (or Vi pound mushrooms) 1 teaspoon basil 3 slices white bread Christina Nawrocky 1. Saute bacon until almost crisp in a large frying pan; remove with a slotted spoon. 2. Place mixture of flour, salt and pepper in a plastic bag, add veal and shake well. 3. Brown veal a few pieces at a time, in bacon drippings in frying pan; remove with slotted spoon and place in 8 cup freezer-to-oven baking dish. 4. Saute onions and garlic in the same frying pan, stirring often, until golden; add to veal. 5. Add water into pan; heat to boiling, scraping cooked-on juices from bot tom and sides of pan; add tomatoes, mushrooms and liquid from can; if fresh mushrooms are used add 2-3 spoons of water; add basil; heat to boiling. Stir lightly into veal mixture; sprinkle with bacon and cover. 6. Bake in moderate oven (350°) for 1Уг hour. Cool. Seal cover and freeze. 7. One and one-half hours before serv ing, remove baking dish from freezer; place covered in cold oven. Set tem perature at 350°. 8. Bake 1 Уг hours or until bubbly hot. 9. Trim crust from bread; cut into J/г inch cubes. Toast in shallow pan. Mix croutons with chopped pasrsley and sprinkle over baked veal dish. Note- If serving veal without freezing, bake as directed in Step 6, toasting croutons in the same oven during the last 10 minutes. НАШЕ ЖИТТЯ, ЖОВТЕНЬ 1983 25
