One of the traditional foods at the Ukrainian Christmas table is KOLACH. It is an intricately woven bread that also serves as a centerpiece. Ingredients: 2 packs of dry yeast 1/4 cup warm water 2 tablespoons sugar 8 cups sifted flour finely grated rind of 1 (one) lemon 1/2 lb of sweet butter 4 egg yolks - well beaten 1 cup of sugar 1 cup of heavy cream - warm 1 cup of warm milk 1 cup of raisins 1/2 cup of chopped almonds 1 egg yolk 2 tablespoons of heavy cream METHOD 1. Dissolve the yeast in warm water and add 2 tablespoons sugar. 2. Allow to ferment for a few minutes. 3. Add lemon rind to sifted flour and mix well. 4. Add butter to the mixture and blend (as if for pie). 5. Add 1 cup of warm heavy cream to the beaten egg yolks. 6. Make a well in the flour and add the yeast mixture and the egg and heavy cream mixture. Mix thoroughly, and add milk, bit by bit so that the dough mixes well, but is not loose. 7. Mix for about 10 minutes. Pat down, cover with a cloth and set in warm place to rise . Dough should double in size. When dough is ready, add raisins and nuts. Mix well and allow to rest for about 10 minutes. 8. Sprinkle flour on a flat surface. Divide dough into two equal parts. Divide one part into four parts and the other part into five equal parts. Roll each into a long tube (all tubes should be of equal length). Let them rest on the rolling surface for 20 minutes. Braid (4) four rolls and place on buttered wax paper. Sprinkle the braid lightly with flour. Then braid (3) three rolls and place this on top of the four braided rolls and dust with flour. Twist the remaining two rolls and place this on top of the three rolls. Cover and put in warm place to rise - double in size. 9. Preheat oven to 375°. Bake the kolach for 30 minutes. Mix egg yolk with 2 tablespoons of heavy cream and thoroughly paint the kolach with the mixture (using pastry brush). Bake for an additional 20 minutes.
