Just Appetizers “85th branch of the Ukrainian National Women’s Leauge of America has published this book with the aim of raising funds to help Ukrainian children who are vic tims of Chornobil. We are confident that this book will be purchased not only by members of our organization, but by generous Ukrainian women everywhere, who will do their part for this noble cause.” Good appetite! Members of branch 85, UNWLA, Chicago, IL November 1991 This is the dedication page of a delightful new cookbook entitled “Just Appetizers” that has recently been published by branch 85 in Chicago. There are 89 pages of finger licking finger foods such as dips, canapes, pates and hor d’oeuvres. There are seven dif ferent categories to choose from and the tasty creations in each are made from cheeses, vegetables, chicken and perfectly puffy dough, among other basics. The book is easy to handle, it has a spiral holder which allows for pages to be flipped back. Each page has one recipe which does not confuse or distract. Some recipes are simply simple, but there are others that require some work. Most recipes in this book are not for serious dieters — there’s lots of mayonnaise, all sorts of cheeses, milk, nuts and other such good things. But that is the nature of a delectable appetizer! To wet the appetite, here are a few recipes from “Just Appetizers.” To get the full complement, you can order the book through UNWLA’s headquarters in New York City, or directly from branch 85 in Chicago. By the way, the cost is small, just $8.50. ONION SQUARES 1 cup mayonnaise 1 cup Parmesean cheese 1/4 cup dried onions Slice fresh French bread into squares. Apply mix ture to bread and bake at 350 degrees until golden brown, approximately 10 to 15 minutes. P.S. I have made this with chopped scallions. It is quick, easy to make and simply delicious. One day while racking my brain for an improptu dinner for unex pected guests that evening, my coworker Chrystyna Pevny offered this recipe. I thanked her then, and still thank her whenever I whip up this goody. Of course, the mayo and cheese proportions can be cut as you wish, and making a few rounds of this hot bread for the family dinner will endear you in their little hearts. SPINACH DIP 1 pint sour cream 1 vegetable soup mix package 1 can water chestnuts 1 package frozen spinach 1 small onion, chopped salt and pepper to taste 2 tablespoons mayonnaise Mix all ingredients together and refrigerate for at least 1 hour before serving. P.S. I am also familiar with this recipe. A neighbor hood cheese store sells a similar dip for lots of money. Another coworker Daria Baiko has a weakness for this dip. With this recipe around I think the cheese store is going to loose some business. SHRIMP CANAPES 1 package refrigerated buttermilk biscuits 1 pound small shrimp, cooked, peeled and deveined 1/2 cup mayonnaise 1/4 cup grated parmesan cheese 2 teaspoons minced onions sesame seeds Bake biscuits according to package directions. Cool, split horizontally. Put several shrimp of each biscuit. Mix mayonnaise with cheese and onion. Spoon some of the mayonnaise mixture over the shrimp, sprinkle with sesame seeds. Put canapes under broiler and broil until golden brown and bubbly, about 3 minutes. P.S. If you love shrimp and hot biscuits, this is a treat. Following the package directions, make the bis cuits small and put only one shrimp on top for the one- in-the-mouth pop. VEGETABLE SQUARES 4 cups vegetables: zucchini, carrots, cauliflower, broccoli 1/2 cup chopped onion 1/2 cup grated cheese (montery jack, swiss) 2 tablespoons parsley 1/2 tespoons salt 1/2 teaspoon garlic salt 4 eggs, lightly beaten 1/2 cup vegetable oil 1 cup bisquick Steam vegetables. Mix all the rest of the ingredients together and add vegetables. Oil the bottom of a baking dish (casserole dish). Bake at 350 degrees for 45 min utes, until it starts to brown. After it cooled, cut into squares.
