MORE ABOUT ROSTYK.... Ellen Bernstein, Editor, Medical and Health Annual of Encyclopedia Britannica, Inc., of Chicago, became interested in Rostyk when she saw Christopher Wellisz’s article about Rostyk in the New York Times of Sept. 4, 1983. Through Dr. Lubomyr Kuzmak, she arranged a visit with Rostyk and his father and UNWLA representa tives. On October 2, 1983, Ellen Bernstein met with Dr. Kuzmak and his wife Oksana (UNWLA Branch 86 mem ber), Iwanna Rozankowsky (UNWLA President), Anna Krawczuk (UNWLA Social Work Chairman), Emil Cylu- Anya Krawchuk pa and his son Rostyk. Ms. Bernstein concentrated on Rostyk and his ability to utilize his hand. She inquired about the Cylupa’s stay in the United States and exhi bited an interest in the work of the UNWLA. The UNWLA President told her about the Ukrainian Museum and the UNWLA Scholarship Funds, giving her printed brochures about the museum and the work of UNWLA, as well as an issue of “Our Life.” In addition, Dr. Kuz mak gave her Rostyk’s entire medical history. MOLDED PINEAPPLE UPSIDE- D O W N CAKE 2 packages pineapple flavored gelatin 2 cups hot water 1 cup cold water Large can pineapple slices Maraschino cherries 3 egg whites 2 cups heavy cream, whipped 11/2 cups vanilla wafer crumbs 'h cup finely chopped nuts Dissolve 1 package gelatin in 1 cup of hot water. Add the cold water and refri gerate until cold but liquid. Meanwhile, drain pineapple slices and cherries well between paper towels; arrange in 3-quart mold. Then pour in enough of cold gela tin to cover the fruit; set mold carefully in refrigerator and chill until gelatin is set enough to hold the fruit firm ly in place. Meanwhile, dissolve remaining package of gelatin in remaining cup of hot water; pour into cold gelatin, stir well. Chill Christina Nawrocky until thickened to consistency of un beaten egg white. Beat egg whites until stiff, set aside. Whip cream until thick and fluffy. Quickly fold in egg whites, cream, wafer crumbs and nuts, all at the same time, until well blended but still fluffy. Turn mixture into prepared mold and chill several hours or overnight. Un mold onto large dish and garnish with some pineapple slices and cherries and fresh mint springs if desired. 12 servings.
