cooky’s comer COOKING WITH CABBAGE _ In this early summer season cabbage is plentiful and delicious. It is low in calories — 1 cup = 24 cal., and contains lots of vitamin C. Red cabbage is especially tasty and economical. Here are a few receipes for this good fare: Cabbage with meat (layered cabbage dish) 1 head o f cabbage — large Vh — 2 lbs. chopped meat bacon tom atoe sauce salt, pepper, spices to taste Boil cabbage leaves as for Holubci. Prepare meat as for hamburgers. On bottom of dish line slices of bacon, then cabbage, then meat. Repeat until all ingredients have been used up. Lay a few slices of bacon on top of last layer of cabbage. Pour tomatoe sauce over the layers. Simmer on low flame on top of oven or bake until cabbage leaves are soft. Serve hot. Cabbage salad with apples. 3 cups shredded cabbage 2 — 3 apples th in ly sliced 1 sm all c a rro t fin e ly shredded lem on ju ic e salt and sugar to taste D ressing — ’ / г cup mayonnaise, У г cup sour cream Sprinkle the sliced apples with lemon juice. Mix with all other ingredients. Pour dressing over salad. Enjoy. Red Cabbage Salad Pour boiling water with vinegar over shredded red cabbage. When slightly cooled pour out water. Add sugar, salt, oil to taste. Cool. Cooked red cabbage 4 cups shredded red cabbage 2 tblsp. bu tter or oil red co o k in g w ine, vinegar, salt, shugar Melt butter in pan, add cabbage and a few tbsp. of red wine. Mix constantly and cook for 5 minutes. Lower flame, cover and cook for 15-20 minutes, adding water till cabbage is tender. Add salt, sugar to taste. Brown a little flour with butter — add to cabbage.
