AN OUTLINE OlF UKRAINIAN EMBROIDERY FOR THE MODERN MISS AND MRS. (The Bacjk Stitch) Embroidery patterns worked entirely in the back stitch may be seen on the sleeves of Ukrainian peasant women's dresses. They are executed in monochrome and usually follow another masis of emlbroidery which is just below the shoulder. Sometimes ’these back stitch worked designs are different from the ones that pre cede them; at other times they are the same, and the only differ ence is that one mass of embroid ery is worked in one stitch while the following mass is worked in another. The latter is true of the design pictured. Just below the shoulder of the dreas from which this pat tern was taken was embroidered in the weaving stitch (see Our Life No. 5) the design you see here. In addition the top of it was finished off by a small border and the bottom of this design had a zig-zag line attached to it. Fol lowing that was what you see pic tured. The color was the same (blade) ; the design was the same, but the stitch was different. The classical pattern presented here was embroidered in a village in the Podolian region of Ukraine. The women there referred to the swastikas as “broken crosses.” Can you see why? UKRAINIAN DISHES Rolled Stuffed Veal (4 servings) ІУ 2 lb. veal steak 1 clove garlic (or more, if you like garlic) V 2 tsp. salt У 2 lb. ground boiled ham 4 slices white bread pulled apart, soaked in water, and then squeez ed dry У 4 tsp. pepper (no salt as the ham is salty enough) 1 egg 1 onion chopped 1 T. fat 2 T. fat 1 chopped onion 1 cup water Place meat on bread board and pound well until thin enough to roll. Crush garlic into salt and pat evenly over the flattened veal steak. For the filling: Brown onion in fat and add to the bread squeezed dry, the whole egg and pepper. Mix and knead well into ground ham. Spread this mixture over meat. Roll up tight ly and tie in several places. Roll well in flour and pilaoe in a very hot pan in which the second am ount of fat has been melted and the onion browned Roast at 400 degrees until meat is well brown ed. Add the cup of water and re duce heat to- 300 degrees. Cover and roast 1 hour basting two or three times. Serve on hot platter covered with the juices from the roasting pan. Fried Potato Rolls 3 cups mashed potatoes У 2 cups grated cheese 2 eggs pinch salt pinch pepper 1 T. flour Comlhine potato with cheese, add eggs-, salt, pepper, and flour. Knead thoroughly and shape into small round rolls. Fry in hot fat till golden brown. Delicious with a roast in place of potatoes. Serve with gravy. Rum Nut Cookies (40-50 cookies) 1 lb. Hazel Nuts, ground*) 1 C. sugar 4 T. water 1 tsp. vanilla 1 T., rum Marmalade Put nuts through meat-grind- er. Place sugar and water togeth er in pan over medium fire and allow to boil a few minutes to make a syrup. Remove from fire and add ground п-uits (reserving about 4 Tsp. to sprinkle on top of cookies), vanilla and rum. Mix well. Place on greased cookie sheet in balls the size of a wal nut. Flatten into circles about 2 in. across. Spread with a dab of orange marmalade and sprinkle with remaining ground nuts. Bake 10-15 minutes at 350 de grees. The pieoples of Eastern Europe and Asia, now under yoke of Bol- sfhevik regime of Moscow, do hope for American assistance in their struggle for freedom and national independence, and ac cording to the quoted statement they surely can expect such an as sistance. The foreign policy of the United States Government is an inspiration for the enslaved peo ples whicti gives them more strength in their long and hard fight for freedom and democracy.
