TO YOUR HEALTH! D I E T A N D F IB E R It seems as if important health and nutritional dis coveries are made quite often these days. The funny thing is, many of these discoveries are really old, time- tested truths, rediscovered and in many cases catapulted into the “fashionable”. The bottom line is that good health is your most important asset, so it is important to weed out the facts from the fads. A recent “discovery’ by the scientific community is fiber. Fiber has been a part of man’s staple diet since he or she first tripped over a stalk of wheat. And it’s a credit to researchers that they have restated the importance of fiber in the diet. Fiber is a significant “find” not only in general good health sense but for those who wish to shed those unwanted pounds. What exactly is fiber? It is that part of our foods — fruits, vegetables and whole grains — which our body cannot digest. Fiber forms bulk in the digestive system by absorbing water, thereby causing the pleasant feel ing of fullness. Fiber is also a cleaner of the digestive system, creating a healthier atmosphere for the process ing of food and elimination of wastes. Lower incidence of cancer and coronary disease is linked to the intake of fiber. Unfortunately, modern nutritional technology has for a longtime seen fit to remove all traces of good, healthy fiber from our diets. Flour producing grain, such as wheat or rye has been robbed of its fiber and bleached to pure whiteness. We are all familiar with bread that not only has a cottony consistency, but tastes like it too. Rice, also was stripped of its vitamin-rich coating to give us fluffiness and grains that don’t stick. It is only recently that the benefits of fiber have been brought to light and whole grains, fruits and vegetables have assumed the importance they should have had all along. It is wise to remember that a balanced diet is the- sensible approach to maintaining good health as well as loosing weight. The following vegetable, fruits and cereals are fiber- rich foods: Vegetables Fruits Cereals asparagus beans (all kinds) broccoli brussel sprouts cabbage carrots celery corn lettuce nuts (all kinds)* peas potatoes spinach apples (eat with skin) berries: blueberries blackberries strawberries cantaloupe grapes grapefruit oranges pears raisins (and other dried fruit) bran oatmeal buckwheat groats whole wheat rice (brown only) *(for dieters, consult the calorie on nuts) High fiber diets for the purpose of losing weight are the easiest diets to tolerate in terms of suffering through hunger pangs. However, dieters have to be aware of the fact that some fiber-rich foods are high in calories. The idea is to consume high-fiber foods in good-sized por tions, but not too high in calories. There are several books on the market, among them the popular F -P la n D ie t by Audrey Eyton, which give an excellent explana tion of the properties, benefits and application of fiber in a diet. WALK YOUR WAY TO HEALTH AND FINANCIAL SUCCESS! A Ukrainian women’s group in Canada — the Or ganization of Ukrainian — Canadian Women — spon sored a “PISHKYTHON”, the Ukrainian version of the Walkathon. Several weeks before the event, interested members gathered lists of sponsors, who pledged their donations for a minimum of five kilometers walked. On the appointed day “PISHKYTHON” contestants congregated at the Ukrainian estate “Zaporizhia”. Each woman received her official “PISHKYTHON” t-shirt and anxiously awaited the start of the event. Cheered on by youthful onlookers, the participants began a two-hour walk aimed at raising money forthe press-fund of “Zhino- chyi Svit” a woman’s magazine in Canada. With a sense of self-satisfaction, the women turned over $900 to the offi cial treasurer of the “PISHKYTHON”. Not bad for two- hours work! This concept although, enjoying great popularity for at least, the last fifteen years has never quite filtered to Ukrainian organizations’ repetoire of money-making pro jects, which include, for example, the ever-popular bake sale.
