A GREAT LOSS Recently we learned about the death in Kiev of the talented painter Alla Horska. According to the news sources she had been murdered and her body found only several days after her death. It would appear to be a family drama, for the reputed murderer was Alla’s brother-in- law. Alla Horska was a fine and talented artist. She was one of a group of artists who designed the Shevchenko memorial stain ed glass window in the Univer sity of Kiev. The window was put in, but later removed by the regime for its too patriotic theme. This was by no means Alla’s first unfortunate brush with the Soviet regime. She was ex pelled from the Artists Associa tion of Ukraine which signals unemployment for any artist. But she still maintained her be liefs. She signed protest peti tions, refused to testify against her friendh and associates, urged greater national and cultural freedom for the Ukrainian peo ple. Her funeral turned into a na tional manifestation, as her fel low artists spoke at her grave side. She was buried in the Ukrainian national dress to sig nify her patriotism. Ukrainian women’s organiza tions in the Free World will hold commemorative evenings to hon or the memory of this patriotic Ukrainian and highly gifted ar tist. UKRAINIAN DISHES From the cookbook Ukrainian Recipes for Festive Occasions, published by UNWLA Branch 12 in Cleveland, Ohio we are print ing these appetizers: Chicken Livers 1 chicken liver per serving “Shake’n bake” for chicken 1 tbsp. oil Preheat oven to 350 degrees. Wash chicken livers, dry be tween paper towels and cut in quarters. Cover with “shake’n bake.” Line a cookie sheet with aluminum foil, spread oil to cov er the foil and place chicken liv er on pan. Bake 20 minutes. Serve on toothpicks with sliced dill pickles. Eggplant Relish 2 medium young eggplants 2 medium oninons 1 carrot 1 1 email parsley root V 4 cup finely chopped parsley 1 tibsp. chopped dill 1 teasp. ground allspice % cup salad oil 2 bay leaves bunch of celery (use only the light tender part- 3 cloves garlic, minced chili sauce, tomato sauce, barbeque sauce with onions and mushrooms to make 1 cup Bake eggplants until soft. Saute in oil until soft, stirring constantly. Do not let brown the vegetables. Add the chopped eggplants to the sauted vegetables and continue until al most smooth and thick. Then add the cup of combined sauces, cook for two to three minutes and add the minced gar lic and green parsley. Mix well, remove from heat and let cool a few minutes before storing in a glass container. When cooled completely, cover tightly and re frigerate. Keeps well for a week or even longer. Prepare ahead of serving. Delicious as side dish with meats. A leader duplicates himself in others. He is a “man” builder. He helps those under him to grow big because he realizes that the more big people an organization has, the stronger it will be.
