BRANCH 72 JOINS NEW YORK CITY FEDERATION OF WOMEN’S CLUBS Branch 72 of New York has become a member of the New York City Federation of Wom en’s Clubs, whose president is Mrs. Dorothy Strayer-Priemer. One of the main projects of the NYCFWC is its Nursing Schol arship Awards dispensed to hos pital nursing schools. This past year $1,650 was awarded to three local hospitals. At the Federation’s Spring Festival, held at the Tavern-on- the-Green, Branch 72 was wel comed and its president, Mrs. Anna Kosciw, took a bow. In the fashion show part of the program, Mrs. Mary Dushnyck, UNWLA Public Relations Chair man who arranged for Br. 72’s Federation membership, served as a model. Also present were Mesdames Irene Padoch, Alice Berwecky, Ann Bezko, Tessie Husiak, Mary Lesawyer, Rosalie Polche, Ann Redosh and Marie Ricket. Branch 72 also took part in the Federation’s 182nd Conven tion at the Hotel Biltmore on May 8th, which heard addresses on Drugs by three experts, and which was entertained by the Federation’s Chorus. Branch 72 president A. Kosciw was seated on the dais and the Branch was formally welcomed to Member ship. Other Br. 72 delegates were M. Dushnyck and A. Bezko and alternates T. Husiak, R. Polche and A. Redosh. UKRAINIAN GIRLS IN BRAZIL Individual Branches of UN WLA are sponsoring scholar ships for Ukrainian girls study ing in St. Olha’s Institute in Prudentopol, Parana. Scholar ships have been sponsored by UNWLA Branches 33 in Cleve land, 68 in Syracuse and 101 in Chicago. the POWs, release the names of those held to their families, and perhaps even free some of the captives. (To be continued) Ukrainian Dishes In issue No. 5 of “OUR LIFE” for 1970 we began publishing re cipes from Natalia Kostecka Stefanyshyn’s cook book “Tradi tional Ukrainian Cookery,” which was originally published in 1952 and has recently been re printed in a new edition. In this issue we offer several other recipes from Mrs. Stefa nyshyn’s book. In the near future we will publish selections from her booklet “Pastries” which ap peared in 1969. Beef a la Yenison (4 servings) 2 lb. Beef (Rump, round or pot roast) 2 C. vinegar 1 C. water 1 large onion, sliced Vs tsp. pepper 1 bay leaf 1 tsp. salt 2 T. fat 1 T. flour 1 C. sour cream 1 T. flour Mix vinegar and water and bring to a boil. Remove from fire, add sliced onion, pepper, bay leaf and salt, and when cool pour over meat in a glass dish. Leave in cold place 2 or 3 days. When ready to use, heat fat in deep skillet, wipe off meat, dredge in flour and brown in fat. Add 1 C liquid in which meat soaked and bake in 300° oven for l J/ 2— 2 hours. Add more of liquid if nec essary. Stir 1 T. flour into sour cream and pour over meat, leav ing in oven until cream bubbles. Remove meat, slice, and arrange on platter. Strain gravy and pour over meat. This is nice served with maca roni or noodles. Carrot Salad (4-6 servings) 2 medium carrots 2 apples juice of Уг lemon 2 tsp. sugar 2 tbs. sour cream salt to taste Scrub carrots thoroughly with a brush and grate (not too fine)*. Peel and grate apples.** Add other ingredients and mix. Prepare about 1 hour before serving to allow time for it to chill. Delicious with veal. Fried Potato Rolls 3 cups masihied potatoes Уг cup grated cheese 2 eggs pinch salt pinch pepper 1 T. flour Combine potato with cheese, add eggs, salt, pepper, and flour. Knead thoroughly and shape into small round rolls. Fry in hot fat till golden brown. Delicious with a roast in place of potatoes. Serve with gravy. * Do not peel carrots as sl^ins are full of minerals. ** Apple skdns may be left on for added color and minerals. UNWLA MEETING The annual meeting of the UNWLA National Board was held in Philadelphia on June 13- 14. Included in the program was a panel discussion on the UN WLA Regional Conferences. PRE-SCHOOL PROGRAM The UNWLA Educational Committee is currently working on a program for its Day Care Centers which will be designed for English-speaking children. To date all the UNWLA Centers were conducted in the Ukrain ian language. New UNWLA is planning to open Day Care Cen ters for English-speaking chil dren whose parents would like them to learn Ukrainian. ST. OLHA’S ICON Twelve icons of St. Olha were received in the UNWLA compe tition which closed on April 30, 1970. The panel of judges will announce their decision shortly. UNWLA plans to produce repro ductions of the icons in comme moration of the 1,000th anniver sary of this Ukrainian saint.
