IMPORTANT ANNIVERSARIES In February and March the Uk rainians observe the anniversaries of two outstanding personages. Fifteen years ago Sop'hia Rus- sova died in Praha, Czechoslova kia. One of the first public work ers of Ukraine, a prominent peda- gog, she devoted her mature life to the Ukrainian feminist move ment. For many years she led the Ukrainian National Council of Women in exile. She participated in various international congress es, like the congress of Interna tional Women’s Alliance in Rome (1923), the conference of Interna tional Council of Women in Vien na (1930), the convention of the Women’s International League for Peace and Freedom (1935). In 1937 s'he was elected honorary president of the World Alliance of Ukrainian Women at Lwiv. Her personality imparted the course and the goal to the Ukrain ian feminist movement. Twenty-five years ago there was fabricated and set up by bol- sheviki the first monster display trial in Kiev capital of Ukraine. The Soviet government was try ing the clandestine Union for Lib eration of Ukraine which had been aiming at separation of Uk raine from USSR. One of the central personages at that trial w*as Ludmila Starit- ska Chernyakhivska, a prominent Ukrainian author and public worker. Her role in the ULU and straightforward stand at the trial speeded her sentence. She was a co-founder of the Ukrainian National Council of Women in 1920. In 1917 she had been elected a member of the first Ukrainian Parliament (Rada) in Kiev. Her individuality likewise con veyed to Ukrainian women a per fect example of a true patriot and a woman of action in restoring the statehood to the Ukrainian people. Ukrainian women decorating Easter eggs EASTER EGG — THE SYM BOL OF FRIEN D SH IP Before Easter the Ukrainian women write beautiful designs on eggs. Such an Easter egg, call ed ‘^san k a ” in Ukrainian, must be found on Easter in every Uk rainian home, as a symbol of luck and friendship. “Pysanky” are be- ing given to relatives and friends, the young girls give them to boys as a token of particular friendli ness. The Ukrainian women in the free world are arranging special courses for writing designs on UKRAINIAN DISHES Ukrainian Babka (Sweet loaf) Vz cup butter 6 egg yolks Уг cup sugar Уг pound flour % ounce yeast 2 to 3 tablespoons cream 4 egg whites Salt, vanilla Some raisins Stir butter well, beating egg yolks one by one. Add sugar, stir until smooth. Combine flour and yeast moistened in warm cream, salt, vanilla, 4 beaten yolks. Stir together lightly, let rise in warm place. Turn out into greased pan sprinkled with bread crumbs and raisins. Bake at 350 degrees one hour. Baked Fish with Golden Sauce (4-6 servings) 3 lb. fish* sprinkled with salt and pepper 2 T. butter 2 T. flour 2 cups milk juice 1 lemon Уг tsp. salt Vs csp. pepper 1 egg yolk 2 tsp. chopped parsley Clean fish and season; place in generously buttered baking dish. Bake at 300° for 15 minutes. Brown the butter and add the flour. Stir in milk, add lemon juice, salt and pepper — stir in egg yolk. Pour over fish. Advance oven to 400° and bake 5 to 8 min utes. Garnish with chopped parsley. * Fresh lake trout, or thick steaks of cod fish or salmon may be used. Easter eggs, in order to foster this ancient Ukrainian tradition. There are experienced writers of designs in every large Ukrainian community in the United States and Canada who are producing large numbers of these pretty ob jects of folk-art every year.
