A copy of the brochure was presented by Maria Shust to each participant of a master - class on baking ko- rovai, including Our Life Ukrainian editor L. Topolya. The recipe presented here can also be used for Easter paska and is published with permission of Ms. Shust and the Ukrainian Museum. 3 envelopes dry yeast 5 ½ cups warm water ½ cup sugar 4 large eggs 1 tsp. salt ½ cup vegetable oil 1 tsp. vanilla Pinch of ground saffron (optional) 18 cups all - purpose flour 1 egg beaten with 1 tsp. water Honey Milk Mix yeast with ½ cup of warm water and 1 tbsp. of sugar in a small bowl. Let stand until bubbly. Mix 4 eggs with remaining sugar, salt , oil, va- nilla and optional saffron in a large bowl. Beat well. Add dissolved yeast to egg mixture; blend well. Add remaining cups of warm water. Then grad- ually stir in flour until a smooth batter forms. Continue adding flour, one cup at a time, unt il a soft, sticky dough forms. The turn out onto a floured board and knead in flour until a soft dough forms. Continue kneading until dough is smooth and elastic (about 10 minutes). Place kneaded dough in a clean, well - greased bowl. Turn dough over to grease other side. Cover with clean towel and leave in a warm place until dough is almost double in bulk (ab out 20 minutes). Repeat risings 4 more times, punching down dough in between. When dough is ready, begin shaping pasky. Heat oven to 400 degrees. Brush tops of pasky with beaten egg diluted with 1 tbsp. of water. Bake 20 minutes. Reduce o ven temperature to 350 degrees. Brush tops of pasky with glaze of 1 tbsp. honey mixed with 2 tbsps. of milk. Continue baking another 35 to 40 minutes un- til pasky are evenly browned and thoroughly baked. Note : This recipe yields 3 paskas. To make one paska, cut ingredients proportionately (i.e., 1/3 will yield one paska. ) До уваги авторів і дописувачів!
