That's what the new world is about -- second chances. comer SWEET POTATO SUPREME 2 cups cooked, mashed sweet potatoes 1/4 tsp. paprika 2 tbsps. cream or milk 1/2 cup brown sugar, packed 2 tbsps. melted butter 1/2 cup butter 1 tsp. salt 1 cup pecan halves Thoroughly mix sweet potatoes and cream in melted butter, salt and paprika. Spread in greased casserole. Making topping by heating brown sugar and butter over low heat, stirring constantly until butter is barely melted. (It is important not to cook after butter is melted, or topping will harden when casserole is. heated). Spread topping over sweet potatoes and cover with pecan halves. Refrigerate until ready to heat. The casserole may be warmed in an oven at any temperature or microwaved, but should be bubbling hot before serving. LOWFAT CRANBERRY CAKE (40 calories per serving) 2-1/2 cups all purpose flour 2 egg whites 2 tsps. baking poweder 1/2 cup white sugar 1 tsp. cinnamon 1/3 cup corn syrup 1 tsp. baking soda 1 can unsweetened apple sauce 1/2 tsp. salt 1 can whole cranberry sauce 1/4 tsp. ground nutmeg 1 cup raisins grated rind and juice of 1 orange icing sugar In bowl, mix flour, baking powder, baking soda, cinnamon, salt and nutmeg. Beat egg whites, add sugar, corn syrup, apple sauce, orange rind and juice. Stir in cranberry sauce. Fold in flour and raisins till moist. DO NOT OVERMIX. Spoon into 9X 3 greased pan.
