English language scholarly works on U krainian lite ra tu re are none too p le n tifu l; every new title , therefore, is a welcome ad dition. M andryka’s work is a pio neer study in an area th a t was not dealt w ith in book fo rm be fore. I t presents much in terest ing historical data and a wealth of biographical inform ation on Ukrainian-Canadian authors. In many respects, however, this study is a disappointing one. The very concept of “ Ukrainian lite ra tu re in Canada,” is no where clearly defined. The sub je c t m atter wonders o ff con stantly beyond the scope of the three key terms in the t it le : “ U krainian,” “ lite ra tu re ” and “ Canada.” A ll w ritin g by Cana dians in the U krainian language seems to be covered — not ju s t belles lettres, poetry and lite ra ry criticism , but folklore, jo u rn a l ism,” as well as popular and scholarly works on a variety of topics. English language lite ra ry works by Ukrainian Canadians are included also, as are co n tri butions to the study of and translations fro m U krainian l i t erature by authors of non supper, zapusty, on February 20, to which i t invited the U krainian American community of Houston. There is a sec tion on “ Neighbors and guest w rite rs ” devoted to non-Cana- dian authors who are described as having made a contribution to the Ukrainian-Canadian lite ra ture “because they either wrote something- on Canadian themes, resided at one- tim e in Canada, or even wrote about somebody else who resided in Canada. (This section, however, does not cover the topic of Canadian themes in U krainian lite ra tu re proper, but merely points to a few randomly selected contem porary emigre w rite rs ). Consid ering such all-inclusiveness i t comes as a shocking surprise th a t a U krainian w rite r o f the stature of Ulas Samchuk (a resi dent of Canada fo r 20 years) is mentioned merely in passing as one who has behind him “ an im posing lite ra ry production” but who has “ not as yet contributed to the U krainian Canadian lite r a tu re /’ One m ig h t have expect ed d iffe re n t and more consist ent crite ria in a work published by the U krainian Free Academy on the occasion of the centennial of the Canadian Confederation and subsidized by the Centen- ial Commission. A banquet was held on February 21, 1971 at the Ferrara Manor in Chicago where some 250 guests paid $25 per person to help raise funds fo r the project. Mrs. Luboslava Szandra, President of the Re- gAonal Souncil explained che pro ject. The language courses w ill begin in the fa ll quarter. Mrs. Vera Bodnaruk, a graduate stu dent in Slavic Studies a t the U n iversity, was instrum ental in involving the U krainian A m e r ican Community in the U kra in ian language project. FIRST “ P Y S A N K A ” COMPETITION In A p ril 1970 the U N W L A Museum Committee sponsored a competition fo r the most beautiful “ pysanky.” Twenty- one artists exhibited over 100 Easter eggs in the competition which was held in the U krainian In s titu te of America. This same exhibit was shown on March 27, 1971 in Philadel phia. Ukrainian Dishes Cheese Cake Dough: % cup butter % cup cottage cheese % cup flour Fruit whip topping: % cup confectioner’s sugar 3 tbsips. tart preserves 3 egg whites juice of 1 lemon Press cheese through sieve (cheese should be d ry). Cut b u tte r into flo u r w ith kn ife blade. Add cheese and knead dough u n til smooth. Re frig e ra te fo r one-half hour. Roll out dough to approximate, ly i y 2 in. thickness. Place on bake sheet and bake at 400 de grees fo r 15 min. When the cake is cooled, spread w ith f r u it top ping. For f r u it whip topping: beat egg whites u n til smooth, com bine w ith confectioner’s sugar, adding i t slowly and m ixin g well. Add preserves and m ix well to a smooth paste. Add lemon juice to taste. Spread f r u it whip over cake.
