36 WWW.UNWLA.ORG “НАШЕ ЖИТТЯ”, ЛЮТИЙ 2016 Branch 95 Bakes Ukrainian Medivnyk (Honey) Cake Sift together: 1 cup sugar 1 teaspoon baking soda 1 teaspoon unsweetened cocoa 1 teaspoon cinnamon 2 cups flour Mix: 2 eggs 3/4 cup honey 1/2 cup oil + 1 tablespoon 1 cup cooled coffee Ukrainian Medivnyk (2 teaspoon of instant coffee in 1 cup of water or 1 cup of brewed coffee) Combine with dry ingredients until well mixed. Pour into lightly floured 9” x 5” loaf pan. Bake approxi- mately one hour or until an inserted toothpick comes out clean. Keep an eye on cake because it burns quickly if overbaked. Vera’s Crumble-Top Platsok Ingredients: 8 oz. sweet butter (unsalted) softened ½ cup of sugar 2½ cups of flour 12 oz. jar of apricot preserves Parchment paper as lining 9” x 9” pan Preheat oven to 350 F. Place parchment paper as lining inside pan. Mix first 3 ingredients together either by mixer or by hand. Dough will be thick but soft. Put ⅓ of the dough aside (will be used for topping). Spread the rest of the dough on the lined pan with your fingers until all the space if filled. Spread preserves over dough. Take the rest of the dough that you set aside and crumble over preserves. Make sure crumbled pieces are small. Bake 30–35 minutes. Allow platsok to cool before cutting and serving. Calling All Cooks!
