Healthy, colorful, and versatile, salmon can be broiled, microwaved, baked, grilled, marinated, smoked, and served cold or hot as an appetizer or as a main course. Salmon Asparagus Casserole 1 can red salmon (drained) 1 can cream of asparagus soup 1 can asparagus stalks (drained) Vi cup milk 1 teaspoon lemon juice Vi teaspoon salt V 2 teaspoon marjoram 2 well-beaten eggs 3 cups cooked rice Preheat oven to 350. Mix soup, milk, lemon juice salt, marjoram, and eggs. Blend salmon into soup mixture. Layer casserole dish with asparagus stalks and cover with 1 Vi cups of rice. Spoon half of the salmon mixture over the rice and cover with remaining 1 Vi cups of rice. Top with remaining salmon mixture. Bake about 25 minutes. Serves 6. Cucumber Sauce Salmon 4 salmon steaks (about 1 inch thick) 3 cucumbers 2 tablespoons butter 1 medium onion 1 garlic clove 1 cup heavy cream 1 cup dry white wine lA cup brandy 2 teaspoons white wine vinegar 2 tablespoons Dijon mustard 1 teaspoon olive oil 1 tablespoon lemon juice V 2 teaspoon salt V a teaspoon pepper 1/3 cup chopped dill 1/3 cup chopped parsley Preheat oven to 400. Peel, quarter, and seed cucumbers. Cut into 1-inch pieces and set aside. Mince onion and garlic and saute (low heat) in butter. Add mustard, salt, pepper, cream, wine, brandy, and vinegar. Increase heat and boil until thickened. Add cucumber to mixture, lower heat and simmer about 5 minutes. Stir in parsley and dill, reserving about 1 tablespoon of each for garnish. Saute salmon in olive oil (about 1 minute on each side) in heavy skillet. Transfer skillet to oven and bake for about 6 minutes. Pour cucumber sauce in serving dish and arrange salmon steaks on sauce layer. Drizzle salmon with lemon juice and garnish with parsley and dill. Serve immediately. Broiled Salmon Oregano 6 salmon steaks 2 tablespoons mayonnaise 1 tablespoon lemon juice % tablespoons oregano V a tablespoon basil Va tablespoon paprika Lemon slices Parsley Preheat broiler. Rinse fish, pat dry, coat both sides with mayonnaise, and place in baking dish. Mix lemon juice, paprika, basil, and oregano and pour one half of the mixture over salmon. Broil about 3 minutes. Turn salmon steaks over, pour remaining lemon mixture over them, and broil for another 3 minutes. Garnish with parsley and lemon slices.
