S p r i n g t i m e S w e e t s L e m o n L im e P o u n d C a ke C h o co la te C h eeseca ke 2 cups chocolate wafer crumbs 5 tablespoons melted butter 3 packages (8 oz. each) of cream cheese 1 cup sugar 5 large eggs 2 ounces melted semisweet chocolate (for batter) 6 ounces melted semisweet chocolate (for frosting) Уг sour cream • Preheat oven to 375. • Prepare crust by mixing chocolate wafer crumbs and melted butter until well blended. • Press crust into 9-inch baking pan (springform). • Prepare filling by beating together cream cheese, sugar, and eggs (medium speed) until smooth and fluffy. Spoon 3 cups of mixture into crust. • Stir 2 ounces of melted semisweet chocolate into remaining cream cheese mixture. • Drizzle over batter already in crust. • Bake for 1 hour and cool. • Transfer cake to plate, cover with plastic wrap, and refrigerate for 2 hours. • Prepare frosting by mixing 6 ounces of semi sweet chocolate and sour cream. Spread over • cheesecake and chill until frosting sets. 2 sticks unsalted butter (room temperature) 5 eggs (room temperature) 2 cups sugar 2 cups flour Уг teaspoon salt V a teaspoon baking powder 1 tablespoon grated lemon zest 1 tablespoon grated lime zest VA tablespoons lemon juice 1 Уг tablespoons lime juice • Preheat oven to 350 and butter and flour 9 x 5 x З-inch loaf pan. • Cream butter until smooth and add 1 Уг cups of sugar. • Beat until fluffy and add eggs (one at a time). • Beat in lemon and lime zest after each egg is added. • Sift together flour, baking powder, and salt and gradually add to mixture, blending at low speed. • Pour into loaf pan and bake 1 hour and 15 minutes. Cool for approximately five minutes. • For citrus glaze, combine remaining sugar with lemon juice, and lime juice. Cook over moderate heat (do not boil). Invert baked cake while still warm and cover with glaze.
