Barbecae Сіте Lamb Shish Kebab 1 cup plain yogurt 2 shallots, finely chopped 2 garlic cloves, crushed 1 tablespoon rosemary 1 '/2 teaspoons oregano 2 pounds boneless leg of lamb Trim fat off lamb and cut into cubes. In large bowl, mix yogurt, shallots, garlic, rosemary, and oregano. Add lamb to mixture and coat well. Cover and mari nate in refrigerator for 24 hours. When marinated, thread lamb chunks onto metal skewers. Grill over hot charcoal for about 10 minutes (medium rare) or slightly longer for well done. Grilled Shrimp Paprika 2 pounds large shrimp 2 teaspoons sweet paprika Уг teaspoon curry powder Уг teaspoon cumin / 2 teaspoon coriander Уг teaspoon salt Уг teaspoon black pepper 1 tablespoon olive oil 2 tablespoons sugar 2 tablespoons lemon juice Combine paprika, curry powder, cumin, coriander, salt, and pepper. Stir in olive oil, lime juice, and sugar. Add shrimp and marinate at room temperature for 45 minutes. Grill marinated shrimp for approximately 4 minutes. Spicy Scallop Kebab 32 large scallops Bacon slices 4 tablespoons oregano 8 tablespoons yogurt 1 teaspoon cayenne pepper 1 teaspoon tomato paste Salt and pepper to taste Combine yogurt, cayenne pepper, and tomato paste for sauce and set aside. Sprinkle scallops with oregano, salt and pepper and wrap in bacon. Thread onto metal skewers and grill about 2-3 minutes per side. Serve with sauce. Chicken Liver Kebabs 1 pound chicken livers Bacon slices 1 can of water chestnuts 12 small white onions (peeled) 1 red or yellow pepper cut into squares Уг cup soy sauce 2 tablespoons lemon juice 2 tablespoons dry sherry Ул teaspoon ginger Combine soy sauce, lemon juice, sherry, and ginger for marinade. Wrap chicken livers in bacon slices. Thread chicken livers, water chestnuts, peppers, and onions onto metal skewers and brush on marinade till every thing is well coated. Grill about 7-8 minutes over hot coals until bacon is crisp. Cucumber-Yogurt Sauce 1 cup plain yogurt 2 cucumbers (peeled, seeded, and diced) 2 tablespoons olive oil 2 tablespoons dry white wine 1 tablespoon minced dill (fresh) У4 teaspoon salt Ул teaspoon pepper Combine olive oil, wine, dill, salt, pepper and yogurt in bowl and blend well. Add diced cucumber. Cover and chill for 3 hours. Serve with grilled lamb or sea food. Horseradish Dill Sauce 12 tablespoons yogurt 4 teaspoons horseradish 1 teaspoon sugar 4 tablespoons fresh chopped dill Combine yogurt, horseradish, sugar, and dill.
