Cocktail Meatballs From the kitchen oflhorM agun 2 lbs. ground beef (do not use chicken or turkey) XA cup water dash of garlic powder 1 egg 2 cups crumbled cornflakes Combine all ingredients, mixing well. Form into cocktail-size meatballs and set aside. Sauce 2 onions, chopped One 14 oz. bottle of catsup 1 Vi cups cold water V a cup sugar Vz teaspoon baking soda 1 tablespoon salt Combine all ingredients. Mix well. Place sauce and meatballs in pot to simmer, covered, about 1 hour, then Vz hour uncovered. May be prepared early and frozen, either together or separately. Yields about 75 small meatballs. AAA Cheddar-Cheese Puffs From the kitchen o f Helene N. Turkewicz-Sanko One 8oz. stick of cheddar cheese (mild). One stick of cold unsalted butter. 1 generous cup of sifted flour. Vz teaspoon salt. Vz teaspoon paprika Shred cheddar cheese and butter by hand. Blend cheese and butter, add flour, salt, and paprika. Shape doughy mixture into Va inch sized balls. (Cheese balls can be refrigerated or frozen up to 10 days). Bake cheese puffs at 400 degrees for 15 minutes. Serve hot. Yields about 48 puffs. Marta’s Caviar Pie From the kitchen o f Marta N. Zielyk During the holidays I love to treat myself and my guests to this decadent and festive-looking appetizer. Naturally, I prefer to use Ukrainian caviar, thus I make sure that every trip to Ukraine includes a stop at a “Moreprodukt” shop to stock up on my favorite varieties of red salmon roe and “choma ikra”. 6 hard boiled eggs 3 tablespoons mayonnaise 1 and Vi cups chopped red onion 8 ounces softened cream cheese % cup sour cream 4.7 ounces (or more) black or red lumpfish caviar Grease well an 8 or 9 inch springform pan. Chop 6 hard boiled eggs, combine with mayonnaise and spread over bottom of the pan. Sprinkle with chopped onion. Blend softened cream cheese with sour cream and spread gently over the onion layer. Cover and chill for at least 3 hours. Just before serving, top with black and/or red caviar, making a pattern if you wish, using dill as a decorative element. Remove sides of springform pan. Garnish as desired. Optional garnishes: lemons, parsley, capers, dills, crackers, thin bread or toast Makes 12 to 16 appetizer servings * * * Spinach Appetizer Squares From the kitchen o f Tania Blanco 2 eggs beaten 3 tablespoons butter, melted 16 oz. shredded cheese (sharp or mild) 1 cup flour 2 teaspoons baking powder 1 10-oz. Package frozen chopped spinach, cooked and drained 1 cup milk 1 teaspoon salt Vz cup chopped green onions (scallions) % cup chopped red pepper for color (optional) 1 teaspoon Worcester sauce Combine all ingredients and spread in a greased 9 X 13 inch pan.
