VEGETABLE SQUARES A quick and easy appetizer 1 package Pillsbury Crescent Rolls 1 package 8 oz. cream cheese 1/2 package Hidden Valley Cream Herb Dressing 1 tbsp. mayonnaise 2 tbsps. sour cream 1/2 cup each grated carrots, broccoli and cauliflower Unroll crescent roll dough on a cookie sheet and seal perforations. Bake at 375 degrees for 12 minute. Cool. Beat together cream cheese, herb dressing, sour cream and mayonnaise. Spread on baked dough. Sprinkle vegetables over the top and cut into squares. (Keeps well in refrigerator). CARROT-CELERY PANCAKES 4 cups shredded carrots 2 whole eggs 1 cup shredded celery salt 1/2 cup finely chopped parsley pepper 1 medium onion, finely chopped 1/2 cup flour 1/4 cup chopped basil (fresh) or 1 tsp. dry olive oil Combine shreeded and chopped vegetables and seasonings. Beat eggs and add to vegetables. Add flour and mix. Heat oil in frying pan. Using large serving spoon, drop mixture onto well heated frying pan. Cook about 4 minutes on each side, making sure not to burn.
