The evening, which ended with a reception at the Ukrainian Heritage Center, was a great success with donations exceeding $3,000.00. Since the performers generously donated their time and talents and Manor Junior College assumed the administrative costs of the program, all proceeds from the concert will go directly to the UNWLA’s Chornobyl Fund. Before and after the concert, those attending had an opportunity to view “Ukrainian Students Sharing Their Heritage,” an exhibit consisting of essays and pro jects on Ukrainian themes (including the Chornobyl accident) written and designed by children from the Ukrainian Heritage School and St. Josephat’s elemen tary school. Swiss Steak 1 1/2 lb round steak (about 1/2 inch thick) 1 clove garlic, chopped 1 tbsp vinegar 1/2 tsp salt 1 onion, chopped 1 can tomato sauce (7 1/2 oz.) 1 tsp packed brown sugar 1/4 tsp hot pepper sauce * Trim fat from steak. Pound meat to flatten slightly and tenderize. Cut into serving-size pieces. Arrange in sin gle layer in shallow casserole. * Combine onion, garlic, tomato sauce, vinegar, sugar, salt and pepper. Pour over steak, turning pieces to coat all sides. Cover and marinate in refrigerator for at least 4 hours. ‘ Cover with lid or vented plastic wrap and microwave at Medium (50%) for 20 minutes, rotating dish twice. Turn meat over. Microwave at Medium (50%) for 20 minutes longer or until meat is tender, rotating dish twice. Let stand for 5 minutes.
