by Christina Nawrocky VIENNESE SACHER TORTE 6 oz. semi-sweet chocolate chips 1/4 cup + 2 Tbls. brewed strong coffee (you may use instant coffee-1 tspn. cof fee in I/4 cup + 2 Tbls. boiling water). Use only 1/4 cup 6 eggs 2/3 cup sifted all purpose flour (I use Wondra flour) 2/3 cup sugar 1 1/2 cups apricot preserves ICING: 6 oz. semi-sweet chocolate chips 2 Tbls. corn syrup 2 tspn. brewed coffee (rest of the coffee from cake) Combine chocolate chips and 1/4 cup coffee in top of double boiler; place over hot, not boiling, water. Stir until choco late is melted and mixture is blended; cool. Heat oven to 350° F. Grease 8 inch springform pan; line bottom with greased wax paper. Beat eggs and sugar together in large bowl with mixer about 10 minutes. Fold cooled chocolate mixture carefully into beaten egg mixture. Stir flour one tablespoon at a time over batter, fold in each addition carefully. Pour into prepared pan. Bake 55-60 minutes (after 20 minutes, lower temperature to 325° for 20 minutes, and then to 300° for remaining time). Cool for 10 minutes; loosen cake, remove sides of pan, turn cake upside down, peel off wax paper. Wait 30 minutes, then cut cake in the middle with very sharp knife. Spread bottom half with 1 cup preserves. Spread remaining preserves over top of cake. Melt 6 oz chocolate chips with corn syrup and 2 tablespoons coffee, stir well until smooth and glossy.
