CUCUMBER SOUP Ingredients 2 carrots — sliced 1 parsley (root) — sliced 1 celery stalk — sliced 1 medium onion — sliced 2 medium potatoes — cubed 2 large dill pickles — sliced Vi cup juice from the dill pickles 3-4 whole peppers 2-3 tablespoons butter 2 whole bay leaves 1 tablespoon sour cream Уг tablespoon all purpose flour 1 can chicken bouillon salt to taste In a skillet fry slightly in buttertheraw cubed potatoes for about 5 minutes. Do not fry them thoroughly. Remove from heat. In a medium pot cook carrots, par sley root, celery, onion, pepper, bay leaves and salt in the chicken bouillon with 4-5 cups of water. Add the slightly fried potatoes and the sliced pickles. Let all this boil over medium heat until the potatoes are cooked. Remove from hear for 5-10 minutes. In a small mixing bowl blend (by hand) the sour cream and flour, add the juice from the pickles and mix together until everything is thoroughly blended. Stir-in this mixture into the soup until it is all mixed together, then place the pot over a low medium heat and let it boil for a few minutes. Stir occasionally so there would be no lumps from the sour cream and flour mixture. This can be served with all the in gredients or strained and just serve the liquid. The best way is to just leave the potatoes and discard the rest. It is recommended to taste the soup as you go along. You may want to cut down on the amount of the pickled juice or add more, according to your taste. provide for the needs of our society. The job of the leadership of any organization is to set the goal and guideline for the future. These in turn are realized through the vehicles of our organization — Regional Councils and Branches. Our membership has the moral obligation to transfer these goals into everyday life — the life of the organization, the life of the community. 3. Our membership provides an un believable amount of cultural, educational and welfare input into the lives of our communities. Many times Branches assume tasks which should be carried out by society as a whole. In such cases we should limit ourselves to supporting roles. Such overwhelming occupation within community projects limits our efforts for our own organ ization. 4. Although we are an organization with 50 years of experience — strength, the recruitment of new members is a vital effort to our growth and further develop ment. Although there are thousands of women within our ranks, there are thousands which must be brought in, their talents put to good use for the benefit of UNWLA and our Ukrainian society. THE MUSEUM UNWLA has an impressive collection of Ukrainian folk art exponents which, as most everyone knows by now, it will house in a museum, scheduled to open in the near future in the new building in New York. However, the museum, a dream of the organization for many years, is not an easy task to realize. Mrs. Maria Barahura explains the trails and tribulations connected with this project in her second article on this subject. She explains that the most important basis for the opening of an exhibit is a sound financial base. The priceless exponents must be catalogued, researched and exhibited in proper surrounding; i.e. in temperature con trolled rooms, with adequate lighting, tastefully displayed on shelves, in glass cases or on mannequins. Each item must have a history — its authenticity proven, its worth established. All these things cost money, whether one buys shelves or pro fessional know how. The museum committee under the direction of Vice President Lesia Riznyk, is now in the process of formalizing the plans for the museum. They will welcome exhibit items, whether they are donated or offered for sale. They also welcome financial support from fellow members and in dividuals and organizations in our community. НАШЕ ЖИТТЯ, СІЧЕНЬ 1976 25 BETWEEN THE PAST AND THE FUTURE. Mrs. Iwanna Rozankowsky, President of UNWLA offers the follow ing thoughts commemorating the 50th anniversary of our organization: 1. We, as an organization have no need to seek new ideology with which to promote growth. Our ideology has proven itself beneficial to us as an organ ization, and to our society. We need only to find better methods with which to real ize more fully our set tasks, to strengthen our financial resources, which will allow our ideas to become a reality. 2. It is very difficult to coordinate a program which will synthesize the wish es of the general membership as well as
