The key to successful entertaining is, of course, thorough planning. The wise hostess leaves nothing to chance, pre pares ahead of time and above all chooses a menu for her guests that will allow her to be a part of the party, rather than part of the kitchen. Following are two recipies of entrees, guaranteed to please your guests and you and give your party that special get-up-and-go! 1. C r a b m e a t or S h rim p N ip p e r s ingredients- 1 can (6 oz) crabmeat or shrimp 1 teaspoon mayonnaise 1 teaspoon grated onion 1/2 cup grated cheddar cheese Flake crabmeat and toss with mayonnaise and onion. Spoon onto canape bases. Sprinkle generously with cheese. Broil 3" from source of heat, 1 to 2 minutes, until cheese is melted and slightly browned. Serve piping hot. Canapes base — white bread — 6 to 8 slices, butter Cut bread crust off and quarter each slice. Saute bread in butter until lightly golden. C o ck ta il S tru d el ingredients- 6 tbsp. butter 1 lb. mushrooms, finely chopped 2 tbsp. finely chooped scallions dash of salt and pepper 2 tbsp. Madiera wine 1/2 teasp. tarragon 1/2 cup sour cream 2 — 4 strudel leaves 1/2 cup melted butter 1 cup fine, dry bread crumbs Preheat the oven to 375. Melt the butter and add mushrooms, scallion, salt pepper, wine and tarragon. Cook, stirring, until most of the liquid has evaporated and the mixture is mushy. Cool, and stir in sour cream. Spread one strudel leaf on a cloth that has been moistened with cold water. The cloth should be damp, not wet. Keep the other leaves covered with damp cloth. Brush the opened strudel leaf generously with melted butter and sprinkle with dry bread crumbs. Form half of the mushroom mixture into a sausage and shape along the bottom of the strudel leaf. Lift the towel gently so that the strudel envelops the filling over, like a jelly roll. Continue filling leaves until all filling is used. Roll the strudel into a buttered baking sheet. Using a sharp knife, cut the strudel into individual serving pieces — about 1 or 1 Уг inches thick. Women & Paid Labor. The International Women's Year has un folded before the complacent view of mankind the many problems concerning womenkind. One of those is the unfair practices women face in the labor market — salary wise. Statistics show that women make up 38% of the working force in the U. S., their qualifications to handle responsible positions are on par with men, yet their salaries are 20% less. ERA — IS ALL HOPE LOST? (cont.) conservative states remained harder to convince of its necessity. Church groups, such as the Mormons and fundam entalist sects rejected ERA on religious grounds. Many women were convinced that if ERA was passed they lose certain legal rights, such as alimony. Rumors from the opposition held that the passage of ERA would open the way for a no-rules-barredabortion, legalized homosexual marriages, integrated prisons and reform schools. One of the most expressive reasons as to why ERA was having a "hard tim e" was stated by Fredi Wechsler of the National Political W omen's Caucus: "W omen's liberation is threatening to a lot of men and women.
