CONFERENCE ON ETHNICITY AND ETHNIC STUDIES A Conference on Ethnicity and Ethnic Studies was held in De troit, Mich on May 19-21. It was initiated by the Detroit Area In ter-Ethnic Studies Association under the sponsorship of the Na tional Coordinating Assembly on Ethnic Studies. Among the par ticipating organizations were the UNWLA Regional Council of De troit and four other Ukrainian groups. Different themes were discussed, like “What is the Her itage Study Center?”, “New Di rections for 1972,” and “Visual Images in the Study of Immi gration and Ethnic History.” The Heritage Center worked in com mittee meetings which were open to the public. UNWLA was rep resented in the Cultural Com mittee by Mrs. Anastasia Volker, UNWLA Organization Chair man, and in the Education Com mittee by Mrs. Olena Klymy- shyn, UNWLA Education Chair man. Mrs. Volker was elected to the Nominating Committee. A Detroit Community Con gress has been planned for Fall 1972. NEW EDITOR OF “OUR LIFE” Our long-time editor Mrs. Ly dia Burachynska, now UNWLA President, has resigned her posi tion with OUR LIFE. Her task was taken over by Mrs. Ulana Lubovych, Ukrainian writer and journalist, who was introduced to readers in the May 1972 issue. As Mrs. Lubovych is a resident of New York City, the Editorial Board will now be situated there. ing habit of rendering such un translatable words as “kum,” by “dear crony” or “godmother of my son” and of “explaining” Ukrainian names in footnotes, (e.g., Ivan — John, Semen .— Simeon, Dotsia — Eudoxia, etc.) Regrettably, neither the editor nor the translators seem to have grasped the great potential of Vasyl Stefanyk, a very modern writer, for the literate and soph isticated contemporary English- speaking reader. UKRAINIAN RECIPES Here are recipes from Natalia Kostecka’s “Ukrainian Cook book,” published by the Inter national Institute in 1952. Roast Pork with Caraway 2 lbs. loin of pork Salt and pepper 1 T. flour 2 T. fat 2 medium sized onions 1 :iibsp. caraway 1 cup water Parsley Salt and pepper the meat well. Sprinkle with flour. Melt fat in roaster until very hot. Add the seasoned meat, chopped onions and caraway. Bake 30 minutes in 400 degrees oven. Add water. Cover roaster and bake at 300 degrees for 1 hour basting 3 times. Remove meat to platter and slice. Strain gravy and pour over meat. Garnish with parsley. Delicious with sauerkraut. Sorrel Soup (Sour soup) — (Serves 6) 6 cups water Vz l'b. soup bone 1 lb. (2 cups) assorted "aw vege tables, chopped — carrots, oafb- bage, celery, onions, etc. 1 cup sorrel, chopped :cine Vz cup sour cream 1 T. flour Salt and pepper to taste 1 T. dill (fresh or dried)* chopped fine 1 T. parsley, chopped fine 3 hard boiled eggs Simmer soup bone and assort ed chopped vegetables for 1 hour. Add sorrel and boil for 10 minutes. Remove bone, saving small pieces of lean meat and returning them to soup stock. Blend sour cream and flour and add to stock. Bring to a boil again. Add salt and pepper to taste, dill and parsley. Place ¥ 2 hard boiled egg, yolk side up, in bottom of soup plate, and serve soup hot or cold. If you serve soup cold, be sure to chill the cups or plates well. 1 T. of dill pickle, chopped very fine, may be substituted for fresh or dried dill. CULINARY TERMS We are continuing our gloss ary of Ukrainian culinary terms. Bride-cake — весільне печиво, коровай. Brine — соляний розчин, розсіл, ропа. Brisket — м’ясо з передньої ча стини туші, грудинка. Broil — пекти під або над без посереднім вогнем. Broiler — 1. частина печі, при стосована до такого печення, 2. молоді курчата. Brook Trout струмковий пструг (форель). Broth — вивар, бульйон. Brownie — шоколядове печиво, порізане на дрібні частини. Brussels sprouts — брусель- ська капуста. Buckwheat •— гречка. Buckwheat pancake •—/ґречані млинці. Buckwheat bread — гречаник. Buffet — буфет. Bull-head — бичок (реба). Bully beef — м’ясні консерви з яловичини. Bun — солодка булочка, пун- дичок. Butcher — м’ясник, м’ясар. Butt •— камбала (риба). Butter — масло; to butter — мастити. Butter bean — жовта стручко ва квасоля. Butter milk — сколотини, ма слянка. Butter squash — сорт кабачка. Butterscotch — 1. цукерка з брунатного цукру і масла, 2. со лодкі страви з приправою брунат ного цукру і масла. By-product — побічний про дукт. Byrrh — сорт французького вина. N.C.
