A n astasia V olker on h er 25th an n iversary of w ork in th e U krainian com m unity. A tea reception was held on Nov. 26, 1967 and m em bers served hom e m ade cookies and p astries. The recipes w ere included in a booklet w hich w as d istrib uted a t th e reception. T he following tw o recipes are selected from th is booklet. R ozky or M eltaw ays 8 oz. cream ed cottage cheese 1 cup b u tte r or m a rg a rin e 2 cups flo u r V i cup m elted b u tte r % cup lig h t bro w n su g ar % cup fin ely chopped n u ts dash of cinnam on Blend cheese w ith shortening. S tir in sifted flour and blend un til dough form s a sm ooth ball. Divide dough into portions fo r ro llin g ; cover dough and re s t 20 m inutes in re frig erato r. On lightly floured board, roll dough in circle one-eighth inch thick. B rush w ith some m elted b u tter, sprinkle w ith sugar, n u ts and cinnam on. Cut into circles. Roll each wedge from wide end, place point side down on greased baking sheet. B ake in p reheated 400° F. oven fo r about 10-12 m inutes. D ust w ith confectioners sug ar while w arm and th en again w hen cold. Yield: about 4 doz., depending on size of wedge. A n a sta sia W ajda U k rain ian T ea Cakes I cup eggs, w hole 1 cup su g ar 1 cup sour cream 4 to 6 cups flo u r W l cups b u tte r 1 cup chopped alm onds o r Уг c. chopped alm onds and y2 c. chopped pecans su g ar cinnam o n Mix eggs, su g ar and cream . Add enough sifted flour to m ake a dough th a t can be handled. Roll out dough 1/4” th ick re ctan gles (th e size should be th ree to one). Spread h alf of the b u tte r over tw o-thirds of th e dough (rig h t- hand side). Fold th e u n b u ttered one-third dough (left-hand side) over a h alf of th e b u ttered s id e ; and th e rem aining b u ttere d side over to th e left. Roll out th e dough and chill. R epeat and use rem aining b u tter. Chill. Divide dough into fo u r p arts. Roll each p a rt into about i/g” th ick rectangle. Sprinkle w ith some of th e chopped n uts, cinna m on and sugar. B eginning a t th e w ider side roll as fo r a jelly roll. It should be about ІУ 2 ” in diam eter. C ut in th in slices and place cut-side down on lightly greased baking sheet. Sprinkle w ith a few m ore nuts, cinnam on and sugar. Bake in preheated 400° F. oven until delicately browned. Y ield: large q u an tity of crisp te a cakes.
