Summer Dinner Often guests arrive in summer time. Relatives from far away or dear friends drop in from nearby. You would like to have them for dinner and enjoy their company. How is this managed easily? It should be prepared in ad vance. The day before or the same day you could do most of the work, if you wish to have it home made. The heating-up will take only a few minutes, after the guests have arrived. A few recipes follow to delight your guests. Menu Fruit Cocktail Salad Meat Rolls Lettuce Salad Fedore Torte Coffee or Tea Meat Rolls 3 lbs. meat (veal and pork mixed) 1 egg 2 onions 1 tbsp. fat 1 tbsp. bread crumbs 2 tbsp. sweet cream 2 mushrooms 3 boiled eggs Cut the meat into small pieces. (All left-overs of meat may be used). Put into pan with grease, one chopped onion and mush rooms. Add a little water and stew it under cover until soft. Then put it into the meat cut ter adding bread crumbs soaked with sweet cream. Now fry the other chopped onion and chop also the boiled eggs. Add all that to the meat and mix it well. Form rolls, powder with flour, dunk into the beaten egg and bread crumbs. Put into pan on hot grease. Fry a little, turning around. Put in a deep covered pan. Can be frozen and warmed up. Note: With recipe made of ground meat, the meat must be perfectly kneaded through, un til it forms one mass. Lettuce Salad 1 lettuce head Уг cabbage head 2 cucumbers 2 big apples 1 bunch radishes 1 bunch green onions 1 cup sweet cream 2 cups sour cream 1 tbsp. sugar 1 lemon (juice) Chop the cabbage, salt it and let stand a while. Chop the let tuce, peel the cucumbers and ap ples and cut it in into small squares. Chop the onion with the green and the radish. Mix it up well and finally add the squeezed cabbage. Mix all ingredients well, salt and pour mayonnaise on it. Mayonnaise: Mix the sour and sweet cream well, add sugar and lemon juice to your taste. Fedore Torte F o r la y e r : 6 ounces almonds 6 egg whites 6 tbsp. confectioned sugar Vanilla flavor Wipe the almonds with a dish cloth and grind it. Beat egg whites stiff adding the sugar little by little. Finally add the vanilla flavor. Mix it lightly with the almond. Put it into buttered and flour sprinkled pan. Bake in pre-heated oven on 325 degrees for three-quarters of an hour. The layer has to be level. C h o c o la te F illin g : 2 yolks 4 tbsp. sugar 2 ounces chocolate Уг lb. butter 2 tbsp. sweet cream Rub the yolks with sugar un til white. Boil the sweet cream with vamlla flavor, add them to the yolks. Put this into a double boiler and mix while water is boiling. The cream will slowly thicken. When thick enough re move from range. Chocolate has to be dissolved with a teaspoon of hot water on the range, without boiling it. Rub butter until foamy, add 1 tablespoon confectionary sugar and rub further. Now mix the two ingredients thoroughly: add to the cooled cream a tablespoon of butter and mix it in well. When the chocolate cream is ready, divide it into two parts. N u t F illin g : 2 tbsp. sugar 1 cup ground nuts 1 tbsp. butter 1 tbsp. confectioned sugar Dissolve sugar in a cup of water and let it boil. Then add 1 cup of ground nuts and put it into a double boiler. Mix while the water is boiling until the cream thickens. Then put it to cool. Rub the butter with con fectioned sugar and add other ingredients, when cream is cool, adding one tablespoon at a time. Put one half of the chocolate filling on the layer, later the nut filling and cover it with the cho colate filling again. You can cov er it with icing or sprinkle with ground nuts. Note: The fillings can be put on a wafer instead of a layer.
