Easter Table H ow nice to recall th e old tim e E a ster cu stom s, esp ecially th ose connected w ith th e E a ster table. D o you rem em ber? T he E a ster tab le w as set up S atu rd ay aftern oon. T h at p leas an t d u ty w as u su ally assign ed to Us girls. W e b egan our prepara tion s lon g b efore. O ne m u st con sider w h a t floral decorations w ere available, w ith th e varyin g E a ster d ates. W hen it fell early, flow ers w ere scarce, as also w hen S prin g w as late. B u t w e w ere in gen iou s, and found su b stitu tes. T he lovely yellow -green ch ar treu se o f th e w illow buds cam e early, and to g eth er w ith th e fresh green leaves o f th e peri w in kle m ade a m arvelous decor ation. A nd ou t o f th e w arm , dark cellar w e b rou gh t th e h yacin th bulbs w e had planted to bloom at E aster, to d eligh t us w ith th eir fragran ce. A sp ecial tab le w as set on th e side o f th e d in in g room , or in th e liv in g room , w h ich ever had th e m ost space. E v ery U k rainian h ou sew ife h as an em broidered tab le cloth or luncheon set for form al occasion s. A nd th a t w e spread over th e tab le. N e x t th e d ish es had to b e properly placed. In th e m iddle o f th e tab le w as th e “P ask a,” th e round E a ster bread. W hen m oth er baked it it w as alw ays nice, h ig h and brow n, w ith a baked cross over it. W e se t it in sid e th e circle o f peri w in kle leaves. On each sid e o f it w e placed a “B abk a.” T h is is an oth er E a ster bread o f a m ore delicate dough. A dorned w ith icin g th ese B abkas looked like tw o w h ite-h ead ed tow ers. L eaves o f p eriw in kle de corated th em also. Special food is placed, to g eth er to be b lessed b y th e p riest. A lo a f o f co tta g e ch eese, a lum p of b u tter, a fe w eg g s and a sau sage. B esid e th em a fe w “p ysan k a,” th e in tricately-d esign ed , m any- colored E a ster eg g s are alw ays placed. N ow th e m iddle o f th e E a ster tab le is set. N e x t w e place oth er item s around it: a you n g baked p ig, or a baked ham , and th e fru it cake “p erek lad an ets,” a ch eese cake, one or tw o to rts, and oth er E a ster p astry. Soon th e p riest w ill arrive fo r b lessin g. T he n ex t day all g u ests adm ired th e settin g , and th e d ish es. T his w as k ep t set fo r th e th ree d ays o f th e en tire E a ster h olid ays, redu cin g one dish a fter th e oth er fo r our use. Ukrainian Dishes CHEESE CAKE (Sirn i k) 25 ounces cottage cheese 10 ounces butter 12 eggs 2 pounds confectionary sugar 1 table-spoon raisins a few almonds 1 stick vanilla 1 table-spoon potato starch 1 table-spoon bread crumbs For Bottom Cake: 1 cup flour V 2 cup confectionary sugar 3 ounces butter 2 egg yolks F irst o f all m ake th e bottom . M ix th orou gh ly flou r and b u tter to g eth er, th en add th e beaten to g eth er su gar and th e 2 eg g yolks. K nead th is m ixtu re, add in g a little lem on peel fo r flavor. P u t in to greased pan, and bake in a m od erate oven on 350° u ntil b righ t golden. A tten tio n : it should not be brow ned. D o not tak e it ou t o f th e pan. A fter it cools, g rease th e sid es o f th e pan above it, th en p ut th e prepared ch eese on top. B ake it in a very m od erate oven for 2 hours, with out rem ovin g it, for inspection. A fter th e 2 hour period, try it w ith a toothp ick . I f th e pick com es clean, th e cake is done. U se th e b est cotta g e ch eese available. R em ove m oistu re from it b y sq u eezin g it in a square ch eese cloth, u n til it is ab solu tely dry. T hen p ress th e ch eese th rou gh a sieve. B ea t th e b u tter u n til foam y. A dd to th e ch eese, and b eat it again. L ater add oth er in gred ien ts — th e va n illa stick h as to be crush ed w ith th e su gar and sifted th rou gh a little sieve. B lend th e p otato starch w ith bread crum bs and sift th rou gh a siev e in to th e ch eese. F in ally add th e foam from 12 eg g w h ites.— Z. T.
