Soyuzanka’s Pen: Cooking Borsch I do not know how it got sta rt ed. Certainly it came from the slogan to preserve old U krain ian traditions. There m ust have been some reason why th e Re gional Council of UNW LA de cided to cook a borsch. How could it be otherw ise? The Re gional Council in D etroit has its contest of E aster bread. Phila delphia its folk costumes show. N ew ark has its Song Festival. And th a t New York should have nothing? We should cook a borsch ? It is easy, you think? Oh, you are wrong. Borsch is a m ost in tricate thing. The Ukrainian housekeeper simply does not cook it like another soup. She individually creates it. The final result depends on her ingenuity, on her character. As her house keeping, so is her borsch. Thus it came about th a t the Regional Council decided to cook a borsch. A ltogether, w ith all the Branches from the New York area, in order to have a real U krainian borsch. There are in our Branches women from W est and from E ast, from N orth and South of Ukraine. All customs, all kinds of preparations should be used to cook it. Finally th e day arrived. Branches brought th e ingredi ents : first Branch th e beets, th e second th e cabbage, th e th ird the garlic, the fourth th e pota toes, the fifth tom atoes. Silently they started to work. Each one recalled th e customs of her home region, and memories of cooking borsch there. The President grows anxious. Shall we succeed? It is our first UNW LA borsch, which has to please everyone. Will it be all rig h t ? “It is boiling,” cried the Pres ident. “A tten tio n ! Now all these ingredients are m ixing up inside. All these parts, contributed by th e UNW LA Branches, to pro duce its marvelous flavor and...” Suddenly she looked startled. Beside the big pot, where the borsch was boiling, and giving of its special flavor, she saw another, a small pot. On clouds of steam , from beneath its lid came a tantilizing smell. “We are cooking a borsch too,” answered a m em ber of a UNWLA Branch, who was in charge of the smaller pot. “We are not sure about the taste . . . And we wish to m ake it separ ately . . .” Silence was th e answer. The President, a teacher, reassured her quickly, and nodded. “Please, do as you like, dear. We shall compare it later.” The women grew busier. As you know — th e finishing of the borsch is the g reatest trick. It is a t this tim e it gets its flavor, its “character.” This is th e mo m ent of the Ukrainian house keeper's g reatest individual ef fort. A fterw ards they s ta rt tasting. One after th e other th ey ap proach the pot and try . Is it ready? Is it short of som ething? W hat is necessary? Salt? Toma toes? Difficult to guess. The women grow anxious, ex perienced housekeepers though they are. How m any tim es they have cooked th eir borsch . . . And it was always excellent. Should they fail this tim e, ju st a t this crucial moment? B ut the President is quick. She approached th e sm aller pot. In an instant — you couldn’t even notice it, she poured its contents into th e larger one. It happened so swiftly, it was a complete surprise. The borsch became delicious! There was never another like it, in th e whole world, because it is really a unique borsch, cooked by th e Ukrainian housekeepers in th e Free World. DOLL CONTEST Ukrainian Jr. League, Branch 52 was in a doll contest in th e Philadelphia Federation of Wo m en’s Clubs and Allied Organi zations on th e first week of No vember and won firs t prize, a U krainian boy and girl doll. These dolls were created by Mrs. Olga Lisovich, President of th e Branch. THE 69th ANNUAL CONVENTION OF GFWC The Annual Convention of th e General Federation of Women’s Clubs will be held June 5-9, 1961, in Miami, Fla. The v ast program , form ulated a t th e 68th Convention, in W ashington, D.C., is already in action. D uring these four days there will be reports from each departm ent, together w ith plans for the future. A t the 68th Annual Conven tion we were represented by our Vice-President, Mrs. Stefania Pushkar, who reported our work and endeavors. We hope to send a representative to Miami to fu r th er strengthen ou rties w ith GFWC. A UKRAINAN GIRL FROM JERSEY CITY A U krainian fresh ette a t S t. The article w ritten by Joyce McGovern and headed “Meet a New Am erican” was about M ary H aw ryluk of 243 York St., Jersey City.
