Junior League Section EDITOR, MISS MILDRED MILANOWICZ— 151 Hopkins £ venue Jersey City 6, New Jersey Christmas gripes from Our Life Raders AKRON JUNIOR LEAGUE Incorporating in its business meeting a report on Ukrainian history, the Ukrainian Junior League of Akron, Ohio, Branch 51 of the Ukrainian National Wo men’s League of America resum ed its activity for the 1946-47 sea son. Under the guidance of the pro gram chairman, Mrs. Julie Tres- sider, a period of Ukrainian his tory will be presented by a mem ber of the club at each monthly meeting. The presentation is then discussed in the form of an open forum by all attending members. The opening topic, “The first Uk rainians/' was given by Miss Do rothy Sudomir at the November meeting of the branch. This was followed by a talk by Miss Olga Zepko who chose as her subject “Ukrainian Music.” The talks prompted many questions that were both stimulating and en lightening. This group was organized in February 1946, through the ef forts of the officers of the 4Jk- rainian National Women’s League 7 of Akron, Ohio. Its membership at the present time numbers twenty five and a con certed effort is currently being made to increase the member ship. Heading the group as presi dent is Miss Sophie Kudera with Dorothy Sudomir as vice presi dent, Julie Zepko as secretary and Eva Zepko as treasurer. The Junior League is affiliated with the YWCA in Akron and partici pates actively in all affairs of the International Institute. Genevieve J. Zepko. J. C. JUNIOR LEAGUE A Christmas party was held by the Ukrainian Junior League which met at the International Institute on Bei^jen Ave., Jersey City. Before starting our yule party president Mrs. Mary Ann Lotowycz presented Mrs. Natalie Magee with a stork present from all the girls, which was deeply appreciated. The yule party began with Christmas caroling of American and Ukrainian carols, interesting motion pictures shown by Mr. E. Koster. Refreshments were serv ed and gifts were exchanged, and the party was enjoyed by all. The guests of honor w6re Blessed Vir gin Mary Sodality members of Jersey City. Bake in a moderate oven at 375 degrees about 10 minutes. A Ukrainian Christmas Eve Dinner Menu (Prepared by Mrs. Palagia Dzera, Sister Mary, St. John Ukr. G. Catholic Church, Newark, N. J., Mrs. Alice Prychoda) MENU Proskura Kutia Borsch Vuschka Fish Sauerkraut and Peas Holupche Perohe (four types served) Pampo-uche Chrustiake Fruit juice (served throughout the meal) Proskura 1 cup flour water Add flour to water and mix un til dough forms a soft stick ball. Place in greased custard or bis cuit cups and bake in a moderate oven one-half hour. Kutia y 2 lb. Wheat grains 4 tbs. honey 2 tbs. poppysseds water Place wheat in a clean cloth. Hammer until the seed is clean. Wash well. Cover with water and cook 3 hours or until soft. Grind poppyseed very fine. Drain water off wheat. Mix poppyseed with honey thoroughly and add this mixture to the cooked wheat with a pinch of salt. Stir all the ingre dients again. Set aside and when cool, serve. Borsch (Made this way in Ukraine) The beets are prepared about two or three weeks in advance in this manner: wash 2 bunches of beets. Р-eel, place whole beets in (Continued on page 5) 1 pound walnut meats, ground | 12 eggs Y a - pound sugar 2 cups of ground czwibak 2 teaspoons baking powder 1 teaspoon vanilla Separate eggs. Add sugar to yolks and mix for at least one hour, stirring in one direction. Beat egg whites stiff and add to sugar and yolk mixture. Add czwibak and baking powder and ground walnuts. Add vanilla. Put in two 9-inch pans. Bake for Y a of an hour at 350 degrees. Test with toothpick. Care should be taken not to jar of slam oven : door. Filling: poung sweet butter 4 yolks of eggs teaspoon vanilla 2 cups powdered sugar XXXX 3 tablespoons cocoa 2 tablespoons strong coffee Mix above ingredients togeth er. Spread between layers and on top of cake. Top with chopped cherries and walnuts. Poppy-seed or Prune Cake Basic Yeast Dough (Josephine Gibbons) 8 eggs not separated 2 yeast cakes y 2 pound or more butter 7 cups flour 1 cup sugar or more vanilla or lemon rind 1 cup щ їік Put yeast cakes in У 2 cup o; lukewarm milk. Take J4 cups of flour and add yeast mixture to it. Mix thoroughly. Let raise. Beat eggs well and add to raised mix ture. Melt butter in 1 coup of warm milk and add to mixture. Add sugar and flour. If dough is sticky add more flour. Mix very thoroughly with hand. Add flav oring. Let raise. Poppy Seed Filling Take 34 pound of seeds and put in boiling water and let stand for one hour. Wash and drain. Put through food chopper o»n very fine knife. Add 1 cup sugar, 3 e&gs, J/ i cup milk, 14 pound of butter, 2 teaspoons of czwibak, lemon rind and a little vanilla. Mix thoroughly. Roll dough thin and spread 'this mixture. Roll. Put in greased pan and let raise Prune Jelly Filling Take 1 pound prune jelly and add lemon rind, ^ teaspoon cin namon, y 2 cup sugar, *4 *cup rais ins. Mix and spread on dough same as for poppy seed filling. Ukrainian Babka (Recipe by Mrs. Anna Nastuk) 1 cup milk 1 cup flour 1 yeast cake 15 egg yolks 3 cups powdered sugar 1 tsp. salt 1 grated lemon rind 1 cup butter 1 cup crisco then add 8 cups of flour Scald 1 cup milk and add 1 cup flour. Mix well. Cool — when still warm add one yeast cake. Put ій a warm place to rise aboy,t 2 hours. Beat 15 egg yolks until le mon colored and add 3 cups pow dered sugar. Add to first mixture. Then add 1 tsp. salt and 1 grated lemon rind. Knead dough for about a half hour. Then add 8 cups of flour, 1 cup at a time. Add 2 cups melted butter and crisco and mix until dough does- not stick to the hands. Fill greased crocks Уз full. Keep in a warm place until dough rises to the top of crock. Bake in a mod erate oven about an hour. Re move babka from crocks when cool. Honey Drop Cookies (Mrs. Anna Nastuk) lA cup shortening 6 tbs. granulated sugar 1 egg 1 y 2 cup strained honey Уг tsp. vanilla Уь tsp. salt y 2 tsp. baking soda tsp. nutmeg 2 cups flour 1 tsp. baking powder H tsp. cinnamon Уд cup blanched split almonds Cream shortening, add 4 table spoons sugar and blend; beat the fegg with the honey and vanilla, and add to the sugar mixture. Sift the salt, soda, nutmeg, flour* baking powder and Y% tsp. cinna mon together and add to the above mixture. Drop by level tea- spoonsful onto greased pans. Put
